Beans and Mango Chicken Salad
Ingredients:
- Boneless,
skinless chicken breast (grilled and cut
into strips), 250 gr
- Black beans (drained
and rinsed), 1 tin
- Frozen
corn (thawed), 300 gr
- Ripe mango
(peeled and chopped), 1 cup
- Green peppers(chopped),
1/2 cup
- Sweet
onions (chopped) (we used red onions), 1/3
cup
- Fresh
cilantro (chopped), 1/3 cup
- Lime
juice, 1/4 cup
- Balsamic
vinegar, 1/3 cup
- Honey, 1 tbs
- Pineapple
preserves (or mango or orange
preserves), 2 tbs
- Extra virgin
olive oil, 1/4 cup
- Garlic
powder, 1 tsp
- Soy
sauce, 1/2 tbs
- Black pepper,
1/2 tsp
- Ground red
pepper, 1/2 tsp
- Flour
tortillas, 8
Preparation:
In a large bowl, toss all the
ingredients except the tortillas. Refrigerate. Serve with the baked tortillas if
desired.
