Cape Malay Marinade for Chicken

Ingredients:
- Buttermilk, 2 cups
- Chunky chutney, 1/2 cup
- Curry powder, 2 tsp
- Tumeric, 1
tsp
- Garam masala, 1/2 tsp
- Fennel
seeds, 1/2 tsp
- Sundried
tomatoes, 4
- Zest of a
lemon, 1
- Sugar, 2
tsp
- Ginger (thumbsize
pieces), 1
- Garlic (cloves),
2
- Chicken
breast (cut in
chunks), 2 pieces
For the mango sauce:
- Pineapple (de-cored,
diced finely), 1
- Mango (diced), 1
- Red pepper (diced), 1
- Yellow
pepper (diced), 1
- Chili (diced), 1
- Basil,
parsley and coriander
- Lemon -
infused olive oil
- Juice and
zest of a lemon
Preparation:
From the marinade:
Place all the ingredients in a
blender and blitz until smooth.
Pour over the
chicken pieces the marinade for at least 1 hour.
Prepare your grill, shake the
excess of the marinade of and grill your chicken over medium heat until cooked.
From the sauce:
Place all the ingrediens in a
blender and blitz until smooth.
