In a large bowl, combine the chicken, soy sauce, garlic, salt and pepper, set aside to marinate for at least 15 minutes.
While chicken marinates, combine honey and mustard, mix well and set aside.
Heat up the oil in a wok, add the onion and cook stirring until translucent.
Add the chicken together with the sauce and cook stirring until the chicken is done.
Add the carrots and cook until tender.
Serve with rice.
