Huevos Chimbos

Preparation:

To cook the eggs are needed small molds such as coffee cups or egg shells used them as molds.

These "molds" are placed in a pot with a "cushion" of corn dry leaves (on the bottom of a big thick bottom saucepan) and about 5 cm of water.

On this place the ramekins to be used and cooked all covered.

Place egg yolks in a bowl and beat well until a creamy consistency and a light yellow color, brush the ramekins with melted butter.

Fill halfway and take them to cook (in the prepared pan) for 10 minutes or until pricked with a toothpick it comes out dry, the molds are removed using a knife and set aside.

Apart prepare syrup in a saucepan pour the water and sugar, bring to a boil and cook over high heat for about 15 minutes.

Reduce heat to medium and add eggs (previously prepared), cook for another 5 minutes, after add vanilla and mix rum with one part of syrup and pour the entire mixture.

Let cool and keep in the fridge.
