Jamón Planchado
Wash
the
ham
and place in
a
large
pan.
Baste him
with
red wine,
white wine,
pineapple
and
orange juice,
add
spices and
brown sugar
until
covered.
Bring
to a boil
and
cook for
half an hour
or two,
remove from heat
and
let
cool.
Remove
excess
fat from the
ham
and
bathe him
again
with
the wine
using
a
wooden
spoon.
Then
rub
with
a mixture of
sugar
and cinnamon
until
it
covers
all,
leaving
a
thick layer,
baste
again
with
wine.
Place the
ham
on
a
rack
tray,
and
bake
it in a previously pre-heated
oven
at 180
º
C
for
40 minutes,
remove
and
garnish
with
slices
of
pineapple,
red and
green
cherries.
Another
home method that
is often
used for
this
ham
is as follows:
to
remove
from the oven
and cover
with
sugar
and cinnamon.
Then
cut
pieces
of
waxed
paper
and
preheat
an ironing machine
to
medium-high heat.
Place
pieces of
waxed
paper with the
side
toward the
ham
and
gently
move the iron,
repeat this procedure
until
you have
"ironed"
the whole
ham.
Bathe
with
a
light caramel
and garnish
with
pineapple
slices,
cherries
and
cloves..
