Pica Pollo
Ingredients:
- Chicken (we
used halved boneless chicken breast),
1 kg
- Fresh
parsley (chopped), 1/2 cup
- Lemons (halved),
2
- Red onion (finely
chopped), 1
- Oil, 2 cups
- Garlic
cloves (mashed), 1/2 tsp
- Flour, 1 cup
- Salt
- Adobo (seasoning),
1/2 tsp
- Eggs, 3
Preparation:
- Clean the
chicken, place
it in a large saucepan with enough water to
cover it.
- Add the onion,
parsley, pinch of salt and bring it to a boil for 20
minutes.
- Take chicken out
of the saucepan and set aside.
- Beat the eggs
.Mix the flour with the adobo chicken seasoning.
- Dip the chicken
first in the eggs batter, then coat with flour and let stand for
20 minutes.
- Deep fry
the chicken pieces until golden brown. Drain excess oil on paper
towel and serve.
