In a large bowl, place the lard and sugar, beat until blended.
In a separated bowl, sift the flour along with the cinnamon. Add it little by little to the lard mixture, mixing until well incorporated.
Add the lemon extract (or can be grated lemon zest or 1 tsp vanilla extract) and mix well.
Roll out the dough between kitchen foil (around 1cm thick) and cut out with a round cookie cutter the polvorosas.
Lay the polvorosas on a lined baking tray and bake in a previously pre-heated oven at 180°C for 15 to 17 minutes or until just lightly browned at the bottoms.
(don't let them brown on top) let them cool down before moving because they are quite fragile while warm.
Dust with powder sugar or normal fine white sugar (we ommited this).
