Soupe Djiboutienne
Ingredients:
- Mutton (cut
into small pieces), 500 gr
- Potatoes (washed
peeled and finely diced), 500 gr
- Onions (peeled
and finely diced), 2
- Small
cabbage (finely shredded), 1
- Leeks (finely
shredded), 2
- Tomatoes (finely
diced), 2
- Garlic
cloves (finely chopped), 2
- Hot chilli (finely
chopped), 1
- Salt
- Coriander leaves
(we ommited this)
Preparation:
Place the meat in a large pot, cover with
heavily-salted water, bring to a boil and cook over medium heat for 20 minutes.
Drain the meat then place back in the pot along
with all the vegetables. Add enough fresh water to cover the ingredients and
season to taste with salt.
Bring to a boil, reduce
to a simmer, then cover the pot and cook for about 30 minutes, or until all the
ingredients are tender.
Turn into a bowl and serve garnished with chopped coriander (we ommited this).
